Ingredients for 2 servings:

2 Eggs
1 cup feta cheese
1 teaspoon Trini Pepper Sauce
1 Avocado
1 Lime
Salt
Black pepper
Brioche bun (alternatives: toasted bagel, toasted bread, tortilla)

Directions:

Heat up a non-stick pan or stainless steel prepped not to stick. Sprinkle feta cheese into the pan and when it starts melting, crack an egg on top.

Cover and cook to desired doneness and egg consistency.

Mash avocado and squeeze lime juice over it.
