Pumpkin Choka

Pumpkin Choka is an essential side dish served with rice or roti. The pumpkin adds a sweetness to curry or another main savory dish that compliments the flavor.

A tip for easier preparation is to find already cubed pumpkin. You will not need to cut it up any further since the pumpkin will cook down and easily mashed. 

Be careful not to overcook the pumpkin so that it doesn't lose its texture.

Substitutes for pumpkin include acorn squash or butternut squash. 

Last, add Trini Pepper Sauce before serving if you desire it spicy!

Ingredients:

  • 3 lbs pumpkin
  • 4 cloves garlic, chopped and crushed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon brown sugar

Directions

  1. Peel and chop pumpkin into cubes, rinse.
  2. In a stockpot, add pumpkin and  2 cups of boiling and cook until pumpkin is tender. Crush/mash pumpkin and add salt and sugar.
  3. In a clean pot heat oil on medium high, then add the garlic; allow to darken to a deep brown.
  4. Strain oil into pumpkin mixture and remove burnt garlic.
  5. Mix, serve with rice or roti, enjoy!
